inspiration needed - guests for lunch today, no oven.

I've got friends coming for lunch today, arranged late last night. They cook Indian food at home and every time they've cooked for us it's been too spicy for DD to eat, so I want to do something western but with lots of flavour. They don't eat meat apart from chicken, and I don't have an oven.

I'd thought of doing chicken breasts bashed, cut into strips and coated in egg, parmesan and flour (or breadcrumbs?), then pan-fried, with veg. Will that work or will I just end up with parmesan goo in the bottom of the pan?

Do you have any better ideas? I am going shopping in 20 minutes. Thanks!

risotto would be good as well.

by the way ime parmesan doesn't go to goo ever! if you put it on top of a dsh in the oven it just toasts and curls up a little.

Ok thanks. Risotto is a good idea for another time but today I'll stick to the chicken fingers as they will want to eat them while running around and playing.
