.... of a fab sponge (!!) I've managed to make.

I tried to make some earlier using loads of melted chocolate (Terrys chocolate orange), butter and icing sugar and it appears to have split or something and all the fat keeps rising to the surface, yuk.

I've bought a piping bag whatsit and want to pipe swirls all around the top edge of the cake.

Been looking on google and am v confused!

would cocoa powder be better with butter and icing sugar than melted chocolate?

VerityBrulee · 23/12/2009 21:55

I did this recently with buttercream icing with cocoa and it was yummy and looked great.

Melt some chocolate in a bowl and add the same volume of double cream, mix it up. Ganche - done! Pop it in the icing bag and off you go!

For chocolate frosting-type stuff (which is good for piping) mix 300g icing sugar and 40g cocoa powder with 100g unsalted butter (at room temp). When mixed together, gradually add 40ml whole milk and keep mixing (hand held mixer best) until fluffy.

If you dont need so much just half the recipe.

so melted chocolate is a bad idea or a good idea if I can be bothered?
