are you sure it's 20inches?? That is huge. I would use a pound cake mix. 1lb butter, 1lb caster sugar, 8 eggs and 1lb flour. Cream butter and sugar until light and fluff,y add beaten eggs a little at a time and incorporating well after each addition then mix in the SR flour bake at 180Deg until cooked ( I would say 35-40mins.)

Lovely ladies thankyou. Will test it out tomorrow. I think I will just have to keep it on a low heat and keep testing til cooked. Will tell you how I got on. Will not be posting pics of my horrendous icing efforts though.

Have you got any Delia books? She has classic fruit cake recipes in various sizes, e.g. for wedding cake. Sorry not to have a direct recipe! Hope your baking goes well.

bootsmixandmatch · 16/12/2009 20:08

will it fit in your oven??

smallorange · 16/12/2009 20:13

The famous lemon drizzle cake needs a pretty big tin....

smallorange · 16/12/2009 20:41

Just realised I have been talking absolute rubbish - it's a 12 in square cake tin. Sorry - recipes still very helpful though.

( goes for a lie down)
