Mint - how can I finish the packet and not throw it away as I normally do?

Whenever I buy mint for a recipe I end up using a little of it, putting it in the fridge thinking I must use this for something else and days later I throw it away when it's all shrivelled up. Any suggestions as to what to do with it? TIA

fresh mint?

freeze it

Chop it up finely and then freeze in icecube trays.

i do this with corriander plants.

We use it to liven up fruit. Chop really finely and mix in with a bit of sugar. Give it a bash in a pestle and mortar to make a crunchy, minty sugar to sprinkly over fruit. Works really well with pineapples and strawberries.
