When to start homemade xmas gifts?

I'm planning to make Marmalade, chocolates, fudge, and some biscotti for presents this year.

I have no idea when to start making it. I'm doing big batches. Mostly to give on Christmas Day but some will need to go out a few days before. Can I start now? Or will it all go off by Christmas? Obviously I'd prefer it to last past xmas day so the recipients have time to enjoy it!
I'm assuming as sugar is a main ingredient, it should last a long time?

It's the first time I've done anything like this so hoping it turns out ok!

the marmalade should be fine - it's something that I would make in January when the seville oranges are in shops and always hope will last until the next batch (ie following Year) Not sure about the others though
