I have LOTS of small sized gorgeous Tomatoes nearly on the turn - what on earth can I do with them HELP!

Really don't want these lovely flavoursome Tomatoes to go to waste

They'll make a lovely pasta sauce - roast in olive oil with a few sliced garlic cloves in the oven for 20-30 mins, stir into pasta with some kind of nice cheese. Could also add olives, bits of bacon, peas or whatever you like.

And quarter them into a big dish of veg for roasting - peppers, squash, red onions etc - big box in fridge, add to fritatta, make ratatouille, have on rice with feta chunked in... om nom nom...

I do a roasted veg 'rat' - easier and less oily than the authentic method ... chop aubergine, courgettes, red pepper and red onion, garlic if you want, toss in olive oil and roast - temperature and time vary but say 200C for half an hour, turning a time or two. Then I add a can of toms but obv. you'd put in your fresh ones. Herbs/seasoning to taste.
