i am planning one for dh's birthday (i shall prob end up eating more than half of it though!). so far i have:

banon de provence
st agur
local camembert
mont d'or
quince jelly, apple wedges, rick stein oat biscuits, water biscuits

does it sound balanced or would you tweak it in some way?

Lincolnshire Poacher for sure.
A very Mature Brie.
A very Mature Stilton.
Also some homemade walnut biscits - a bit like the Fudges ones you can buy. Will try to find the recipe and link.

I LOVE the idea of Quince - how do I not know about that already?

sallyjaygorce's suggestions meet with my approval. I would also include a large wedge of Isle of Mull cheddar from the Tobermory dairy. Yum.

callme - sounds great would love the recipe as finding some decent carb to pair off the cheese with is an even bigger problem. i have heard of popina biscuits but they are £££

oh i see - you basically stuffa few truffles into a wedge of brie and let the flavour infuse through the cheese over several days...???

Duchy Originals oatcakes are v nice.

Don't forget the celery and some fat-git pickled onions (Garners if can't get homemade).
