Can anyone recommend a really good cheese fondue recipe?

A white wine based one rather than beer....

Well, the classic Swiss one has white wine in it.

Rub garlic around the pan and pour in 8 fl oz of white wine and 1 teaspoon of lemon juice. Heat it until gently bubbling.

Add 8oz of gruyere and emmental grated and stir until melted. When it's melted mix 2 teaspoons of cornflour with 2 tbl spoons of kirsch and stir in, to thicken it up.
