I need a receipe that is very carrot, parsnip and butternut squash heavy

Veg gratin/bake thing?

Chop up veg and boil until tender, but not too cooked.

Put in casserole dish.

Mix 200ml creme fraiche, 2 tsp horseradish, salt and papper.
Mix into veg.
Cover with grated cheese, gruyere is nice.

Bake 25 mins, or until golden.

Can laso be prepared in advance then heated on day.

Do freeze some portions of whatever you make so if you get fed up of it, it won't go off!

I would roast them with some onions, and then freeze most and make soup with the rest (by adding some stock and herbs and then blending).

Roast vegetables are yummy as a side dish, or you could add some pasta and some feta for a veggie main.

Yippee-do-dah, you ladies have won the day!!!!

Will gratin some tonight for tea, and have ordered a v nice chicken with tonight's shop, so will whack the rest under that tomorrow, roast them, then soup the left overs. Mmmmmmmm!!! My family are about to turn orange with the level of carrot!

Mild curry.
Onion - fry
Peel and cut up carrot, parsnip and squash.
Fry for short while with onion.
Add either curry paste and water,or powder and stock
Cook for 20 mins.
Add red lentils - cook until lentils are soft...
This is great, will freeze, and can be pureed into soup if you get fed up of it.....

or you could put the curry into shortcrust pastry and baked like a samosa.

1lb stewing steak
parsnip
carrot
sweed
shallots
tin of tomato puree
2 tins of tomatos
beef stock
2 tins of corned beef
pepper (i like lots do it to your taste)

chuck it all in a slow cooker tis the best stw ever and you could add as many veg as you like
