What wintery puds for Xmas can I make in advance and freeze?

I'm menu planning for Xmas and need a couple of puds to serve that I can make in advance and freeze and then just heat up.

DH not too keen on fruit, annoyingly.

orange and brandy treacle sponge. brill for anyone who doesn't like xmas pud.

soak orange slices in brandy for at least a couple of hours ( although I do mine for about a week).

made a quick sponge base.. add in mixed spice orange zest and a squeeze of orange juice.

place soaked orange slices aound heat proof bowl... cover in golden syrup.. pour in sponge mix... and steam.

it freezes and re heats in a microwave brilliantly and goes really well with cream or brnagy butter etc on the day. and if DH doen't like fruit.. he can pick the orange off

Strudel type thing

Roll out some puff pastry & dollop in some stewed apple, cinnamon & raisins or winter fruit. Roll up the pastry & seal. You can do an egg-white wash and sprikle on some caster sugar then wrap in cling film & freeze. You can bake from frozen for about 45 minutes or thaw and bake for about 20
