stirlingswooshbang - please can you post your chorizo,potato and bean stew recipe for me?

Sounds good...for a starter can i recommend chorizo and sweet potato soup...ive just had some for my lunch; v. nice!

Gently fry one onion until it softens a bit, then add chopped chorizo and fry a bit more.

Add chicken stock, water and 2 chopped, peeled sweet potatoes. Simmer until potato is soft...blitz and voila!!

Here you go.....

700g new potatoes, quartered
olive oil
1 red onion (though I use ordinary onion if that is all I have)
500g chopped up chorizo
4 garlic cloves
1/2 tsp dried chilli flakes (optional)
400g butter beans (I usually use cannellini)
400g tin tomatoes
2 bay leaves
150ml chicken stock
chopped parsley to garnish

Boil potatoes first for 10 mins then drain.

Then heat oil in pan and add onion and cook for 3 to 4 mins then add chorizo for few more mins. Then add garlic and chilli flakes and potatoes, beans, tomatoes and bay leaves.

Add stock, bring to boil and simmer for 10 mins. Add parsley and serve with crusty bread (I serve with rice too sometimes).

Forgot to add - serves 4 but easily doubled.

BTW the last time I made it I did it the night before we needed it and it was even better the next night
