vegetairian homely stew? how to?

we are going meat free this week and i want to make a veggy stew has anyone got a recipe? thankyou

very roughly dice big chunks of
carrot
turnip
onions
celery
parsnip

put them in a casserole dish and cover with tarragon vinegar and some vegetable stock

cook in a slow oven for a few hours.

My Kids like this,

1 onion, chopped
3 or 4 carrots, chopped
3 or 4 potatoes, chopped
1 parsnip, chopped
chunk swede chopped
handful of barley
2tspns cumin,
pepper
1/2 pint veg stock.

Put it all in a pan and simmer for about 45 mins, keeping your eye on the amount of liquid. This will feed about 4 with some nice, crusty bread.

You could try onions, carrots, parsnips, garlic, couple of tins of mixed beans, veg stock, plenty seasoning. Simmer until veg are tender.

OR cook a bag of dry white beans. fry a couple of onions and a red pepper with some garlic until soft. Add 2 tins of tomatoes and some mediterranean herbs. Cook for a few minutes. Add cooked beans, simmer for about 10-15 minutes, then shake a generous amount of lemon juice over the stew and stir. Serve with crusty bread or rice.

I chop up a selection of veg, parsnips, swede, carrots, leeks, a chopped onion. Cover with boiling water, add a veg stock cube, a tsp of marmite. A good dash of Henderson's relish.I add red lentils & butter beans. And loads of ground white pepper.

I know you didn't ask about this but I always make dumplings out of a normal cheese scone recipe roll into balls and drop them on the top of the stew, cover for about 30 mins....lovely!

Fry some onions, add a tin of butter beans and some carrots plus any other veg you have hanging around (green beans, mushroom, cabbage), sprinkle over a bit of veg stock powder, and open a large can/bottle of cider - pour over enough to cover, and cook for 20-30 mins while drinking the rest of the cider

Last week I made a great veggie dish. I chopped basially whatever veg we had in the fridge - red pepper, green pepper, mushrooms, onion and garlic, as well as some crushed cardom. I popped them all in a caserole dish with a little bit of oil at the bottom to stop the veg sticking. Cooked it for about 20 minutes (ish). I then added a tin of chopped tomatoes and cooked it for about another 20 minutes. It tasted delicious and was so quick and easy to do. If you want to bulk it out a bit more, add a tin of mixed beans or canellini beans/
