Any tried and tested recipes with Baileys in?

I bought a 1L bottle of Baileys in Asda as they were selling it for a good price

As much as I like a little tipple of Baileys now and then, I don't think I'll get through a litre, so does anyone have any good recipes with Baileys in?

Especially a cheesecake.

they had the 1ltr for 10pounds in sansbos today i think i might see if they still have them tomorrow.

not made anything myself but i did once buy DH the mostly lovely home made choc baileys muffins. they were to die for. sorry no idea what recipe they used.

I have a recipe (tried and tested) Baileys and White Chocolate Cheesecake - hang on, I will go and look for it.

DH made a yummy Bailey's cheesecake from Nigella's website last weekend. Will make him find link in a mo!

Here we go...

chocolate biscuits 175g
unsalted butter 60g melted
white chocolate 150g chopped
cream cheese 600g
creme fraiche 300g
caster sugar 200g
vanilla pod 1 - split open
3 large eggs at room temp
Baileys 60ml - I sloshed more in, but I suppose it depends if you like more or less.

Heat the oven to 180/fan160/gas4. Base line a 23cm springform cake tin with baking parchment.

Whizz the biscuits and mix with the melted butter, press down into tin and bake for 10 mins then cool.

Melt half the white chocolate - cool. Beat the cream cheese until smooth, then beat in the creme fraiche, caster sugar and vanilla seeds. Beat in the eggs until you have a glossy mixture. Fold in the melted chocolate and the rest of the chopped chocolate and stir in the baileys. Pile everything into the tin and smooth,

Put a tin or a dish of water on the base of the oven to create steam and put the cheesecake on the middle shelf. Cook for 50 mins to 1 hour, the cake should wobble a little when moved but will look puffy and set. Turn the oven off, open the door a tiny bit and leave the cake to cool completely (minimises cracking). Chill for at least 4 hours before serving. Decorate with chocolate shards or shavings.

Found a recipe for Baileys and chocolate cheesecake but it only uses one small shot of baileys.

You can also add it to milky coffees.

I think you should just drink it all - get a tall glass, fill it with ice, then pour over Baileys

Nigella's version.

It is gorgeous but I'm very taken by Bella's with the chocolate in. (I saw it on our cake thread, Bella, after DH had made Nigella's, dammit!)

Bailey's truffles - melt some dark chocolate. Let it cool a bit, then add a couple of good slugs of Bailey's. It will become a weird consistency and look horrible, but don't panic. Add some runny honey (yes really) slowly, beating it all the time, until it becomes lush and shiny. But it in the fridge until it sets, then use a teaspoon to put it straight in your mouth make small balls, roll them in either cocoa powder or icing sugar (or chocolate strands or other sprinkle type stuff) Delicious! Ironically, the recipe is from the book which went with "Cook Yourself Slim" on Channel 4. I think the idea is that they're so satisfying, you only need to eat one. Oops. I made a job lot last Christmas, and gave them out as presents

Oh I have got guests for lunch this coming Sunday, will make those truffles and will hopefully impress my brothers new partner (will be the first time of meeting). Thanks EvilTwins

I was going to freestyle a choc and baileys muffin recipe by substituting some of the milk for Baileys. I think I'll give it a go. Wish me luck!

forget the orange sorbet you dont need it and they can be made in advance

The muffins were ok, but not worth wasting Baileys on I think.

I used 100ml of Baileys so maybe it wasn't enough. Maybe coffee and Baileys as I think maybe the cocoa overpowered the Baileys flavour.

Shillelagh - pour one part vodka to 2 parts baileys into a glass. Sit back and enjoy. Don't drink too many as you will fall over like you have been hit by a Shillelagh

Also very nice poured over vanilla or toffee ice cream

On my first holiday with dh his family introduced me to a new drink, as I liked Baileys so much. It was called a BMW
equal measures of baileys, malibu and whiskey mixed and served over ice.

Some savoury recipes, mostly cream sauces but a fantastic baileys white choc mousse.
I also managed to convert an Annabel Karmel malted chocolate ice cream recipe to a baileys white choc ice cream - will tell more when not got DS on knee!

Id love the recipe for Baileys white choc mousse if you have it please Yorky? because clearly, i don't weigh enough as it is!

Especially for anyone who is on a high calorie diet!

4 leaves gelatine
8oz white choc
3 whole eggs
1pint whipped double cream
2 tablespoons (not the way I do it!) baileys

Soak gelatine in cold water
Melt chocolate
Break eggs in to a bowl over simmering water and whisk until frothy
Squeeze out the gelatine and whisk into eggs
Stir in the melted chocolate
Add the whisked cream and Baileys (I whisk them together) mix well and place in fridge to set.

Pretty simple - even DH has managed it, never had any complaints about it either!

I keep meaning to try the Baileys bread recipe in the book, but a lot of the recipes seem to be for seafood which I'm not a big fan of, not sure I see the point of adding Baileys to a cottage type pie filling, but baked stuffed mushrooms with baileys and mascarpone is clogging my arteries just thinking about it!

Any chance of the ISBN number for the book please? I'd love a copy!
