I roasted a chicken yesterday, made the stock and want to use the left over chicken to make a couple of small chicken pies, one to eat today (dp out so not eating hence why small) and the other to freeze. What should I do? Can I cook the pie and freeze and reheat or not?

I would.
I would defrost it before reheating it though.

I would freeze it with uncooked pastry.

You are definetely ok to re-freeze the chicken, but I would agree with freezing the uncooked pastry.
