Liver- which animal:pig, cow or sheep?

I'm thinking about buying some liver to give to 9 month old dd as she seems to like strong meaty tastes.

I hate liver so never normally buy it. Which would you recommend for tenderness and flavour; lamb, pig or calve's liver?

Lambs liver - every time. Pigs liver is very strong tasting and can be quite rubbery, cows liver is just blueeeeerggh, but lambs liver, cooked lightly with roasted onions is lovely.

chicken livers (I could only find in frozen food section) were the only ones ds would eat when he was small. I buy lambs liver for dh & myself but neither of my kids have eaten it and I hated it as a child.

And as the liver is involved in processing anything toxic in the body (is that the right way to put it?), I'd go for organic, even more than with other meat.

Lamb - its impossible to buy organic from normal places though so lamb the best bet for not mucked about with.

Slice it really thinly then dust it in flour and fry for 2 mins a side then add to prefried bacon and onions...mmm

You can get organic chicken livers from Waitrose. Bit of honey and soya sauce, grill. Or simmer gently in stock. In fact having that for lunch today. Yum!

I always use lambs liver. I always soak it in milk over night because that's what my mum used to do.
