for years I have used the same recipe and it makes a lovely cake......trouble is it makes 2 large(12 inch) cakes and a 7 inch...
now my dear old dad has gone I need to make less cakes, I only want one 12 inch cake..... so any ideas how I can cut it down, but still use the recipe??? 350g SR flour
2.5ml salt
2tsp mixed spice
1tsp ground nutmeg
1tsp cinnamon
1tsp ground gloves
1lb rasins
1lb currants
1lb sultanas
8oz chopped peel
8oz glace cherries
4oz almonds
4oz ground almonds
10 oz soft dark brown sugar
12oz unsalted butter
1 lemon
8 eggs
4 tbsp brandy

cld you not make your 12 inch cake and then use the left over mixture to make loaf tin size cakes and give them away as xmas presents? for friends, relatives or then cut them in half and give to your paperboy, bin man, postman, etc

Maybe just half everything. Make one 12" cake and one smaller one to give away (even to a local church as they usually put food together for homeless/poor)

so will that work, if I just half it?
