In praise of Jamie Oliver's tomato sauce!

Hi, just thought I'd share this recipe with you. I clipped it from the 'Daily Mail' recently and have been trying it out, and we love it! We use it as a pizza base and in pasta sauces or add it to stews, and, best of all, dd eats her veg without fuss! This will make plenty, so ideal to freeze in portions. Below is the recipe, altered slightly to our family's taste:

3 tbsp oil
3 small onions, peeled and chopped
2 red peppers, chopped
3 courgettes, grated
3 carrots, grated
3 stalks celery, chopped
1 large pinch dried oregano
2 bay leaves
6 x 400g tins chopped tomatoes
2-3 garlic cloves, crushed (depending on taste)

Heat enough oil to cover the bottom of a large saucepan and fry the onion, celery, pepper, courgette, carrot and garlic for 5-10 minutes. Add the oregano, bay leaves and tomatoes then season with salt (depending on taste and who you are cooking for) and pepper. Simmer for around 30 minutes.

Allow to cool slightly before blitzing with a hand blender. Freeze once cool.
