need pudding for up to ten women tomorrow night - have puff pastry and an apple tree

presumably I can pull together some sort of puff pastry apple tarty thing - how though?

Am CRAPOLA at puddings and normally burn everything

Tarte tatin springs to mind, though it's need to be fairly big for 10 people.

I've made tarte tatin before but always manage to burn caramelize it overmuch

I have large rectangular ceramic dish - can I make something useful in that?

Strudel... slice apples, arrange along the puff pastry, sprinkle with some walnuts, raisins, a little brown sugar and some cinnamon. Roll up to form a long sausage shaped thing, tuck in the ends (seal with egg wash) and tuck them under. Cut little diagonal slits along the top, cover with more egg wash. Cook for about 30 mins (or until golden) in a medium oven. Take out and allow to cool for a few mins before sprinkling with icing sugar. Easy peasy lemon squeazy!

Make a large apple turnover type thing with a large rectangle of puff pastry rolled out and cooked cooled apples piled up on one half and then the pastry folded over to enclose it all, then baked in quite low oven until cooked.

Pastry at bottom could be soggy though, so you could just cook the apples, then choose a nice dish to serve the pudding in, cut puff pastry to fit top of this dish and cook the puff pastry case seperately in the oven, then pop it on top of the apples once cooked.

Or individual apple turnovers if you can be bothered?

it's just a perfect girls' pudding involving cream, sugar, meringue and cassis and no cooking and guaranteed all round swooning

ok shop meringues, those individual ones ? get two or three and smash them up (you can make your own and smash it up if you are a swot but it doesn't make a huge difference)

about two large pots of double cream

two heaped tablespoons icing sugar

a measure of blackcurrant cassis

whip the cream to the point before it stiffens to solid, it needs to be really really thick

pour in the icing sugar and smashed meringues and cassis and mix thoroughly

line a cake tin with clingfilm

pour in the mixture without eating half

freeze for at least two hours

immediately before serving turn it out on a nice plate upside down, it's an ice cream cake and serves like a cake

for a nice tart sauce make a berry coulis (couple of tins of unsweetened raspberries mixed with some fresh berries, all whizzed up and then the seeds strained out)

LOVE the Fbem idea, LOVE the streudal, banoffee pie - my god sounds amazing ...

is egg wash just a beaten egg brushed on?

might go with the streudal as I have the ingredients and save the fbem and banoffee pie for next time

will serve with ben and jerrys
