Ideas for what to bake for school cake sale please?

Hi, would like something simple that looks stunning (!) that I can bake today or tomorrow for a school fair on Saturday, I have bought some of those paper and cellphane bags and was thinking cookies, or muffins, maybe some tray bake that I can cut into slices and bag up. Any ideas oh wise ones?? I usually just do pretty fairy cakes but the MN wisdom seems to be they would go stale by then.

If I was making something today for Saturday I would make either carrot cake or chocolate brownies as both of those will be fine after a couple of days if kept in sealed container.

I make this Carrot Cake as a traybake and it is lovely and moist. Just keep it wrapped up till Saturday and then drizzle the lemon icing on top on Sat morning and it will be fab

I tend to do banana bread and/or lemon drizzle cake. I sometimes bake in advance and freeze the banana bread [efficient].

Rocky road is a good seller, v easy and cheap to make and you store in fridge so can make couple of days in advance.

Stirling, that carrot cake is lovely, I have made that recipe a few times.

You could make some parkin, that gets better with age.

bella, I love that carrot cake and it isn't too difficult either.

Another one that keeps well is a Nigella Dense Chocolate Loaf Cake - I have made one tonight and (according to the domestic goddess herself) it is better after a day or do as it is so moist.

Orange Seed Cake. A standard Madeira cake with Orange Zest, Orange Juice and caraway seed. For every egg, zest of half an orange and one teaspoon of orange juice and a teaspoon full of caraway seed. Good keeper.
