Just in case you are still watching this thread, I have cooked the following Lentil Dahl and it is yummy (and tres easy):

2 cups red lentils
3-4 cloves garlic, chopped
1 tblsp ginger (I usually omit this 'cause I never have any in...)
spinach (however much you fancy, I usually put in half a big bag, ~130 g I think)
1 tblsp curry powder
1 teasp ground cumin
1 teasp ground coriander
1 teasp yellow mustard seeds
4 cups vegetable stock

(recipe also suggests red pepper flakes and ground cinnamon, but I never bother).

Bung into slow cooker. Heat on Low for ~ 6h.
