Recently ate at Wong Kei's in Soho and had a fantastic dish which was king prawns on a bed of boiled rice, with slices of chilli on it. Don't know what else they'd put in it but it was fantastic. The prawns weren't in batter or anything. Can anyone help me out with a recipe please?

Here is a chilli-salt recipe I found in one of my books, worth a try:

3 red chillies, seeded and chopped
2 tbsp flaked sea salt
2 tsp cracked black pepper
3 tsp chinese 5 spice powder
1 cup rice flour

places spices in a grinder or mortar and pestle and grind. Add rice flour, mix well to combine.

2 egg whites, lightly beaten.

dip prawns/squid/other in egg white, press into chilli-salt mix to coat. Using peanjut oil, deep fry a few pieces for 30 seconds or untily light golden.

I may try this myself!
