Would you eat ricotta cheese 2 days after it's use by date?

As in to warm through pasta and reheat the next day. It smells ok!

I'm funny about cheese and personally I wouldn't do it. If you were eating it now then maybe it would be OK, but to warm through and then re-heat.....nope.
