HELP - plum vodka fermenting! What can we do?

Made some plum vodka yesterday - baby plums, sugar and much vodka. Been shaking it to dissolve sugar but have come back from day out and its starting to ferment!
What can we do? Its never happened before.

Bit late now but you shouldn't shake it, gently twist the bottle to dissolve the sugar over about a week to 2 weeks.
I'd leave it for a day or so to see what happens but you may need to start again.

Have a lovely recipe for Plum Brandy if you want it which is nice.

if it still smells nice (not vinegar) you must have lowered the volume to less than 18% so you can let it foment out (presuming this is natural yeast at work.) then use a camden tab to kill, and then a couple of days later sweeten to taste.

careful the bottle doesn't explode though.

Thank you for your wise words.

Still smells of vodka so not off yet.
Trying to track down a demi-john to put it into then up the vodka content and let it bubble away. DH was worried about it exploding so now the lid is off and I'm expecting pink vodka all over the kitchen floor and p*ssed kittens in the morning
