(not my recipe, found online, was not credited to anyone, VERY good recipe though, may need to add a bit of milk to finished result before serving, as i found it a bit thick!)
Creamy coconut lentils
Vegetarian, Contains iron, Good source of B vitamins
1 dessertspoon rapeseed or sunflower oil
Half a small onion, very finely chopped
100g lentils
200ml water
50ml reduced-fat canned coconut milk
Fry the onion in hot oil until soft. Add the lentils and pour over the water. Cover and cook gently for 15 minutes, or until the lentils are nearly soft, stirring occasionally. Add the coconut milk. Heat through for a further 5 minutes. Purée or, for an older baby, mash or serve as it is.
