I thought you had to for some reason? But it is a terrible pain in the arse - saying that - I think you only need to as it helps them retain their colour from the freeze?
Yes, I think that's it - I remember eating countless portions of muddy greenish ones of mother's - they tasted fine!

They taste better if you don't but I suspect you'd be advised not to keep them so long.

I have converted to climbing french beans this year though because I think they're tastier.
