I'd use short grain brown rice - quite similar to risotto rice - takes longer to cook than long grain but is much softer and actually nicer than white rice - and will definitely absorb the stock.

Thanks - I had to track some down in a health food shop - but I've now located short grain brown rice. Haven't tried it yet though.
