Chilli Bean Soup

Chop 1 onion and saute with 1 tsp chilli powder, 1 tsp ground corriander, 1 tsp of ground cumin, 1 crushed garlic clove.

Then add 1 400g tin of Kidney beans,
1 Tin of chopped tomatoes and 600ml of veg stock, bring to the boil
simmer for 15 mins and then blend

to serve put some tortilla chips stickng out of soup and sprinkle with grated cheddar, only takes a min for cheese to melt, yum!

I used chicken stock and added abit too much chilli powder, so it was quite hot but it was lovely

It was lovely, even dd1 enjoyed it,
and the tortillas were lovely dipped in it, not very many ingredients and quick to make

will be even nicer on a winters night!

YUMYUM! Great idea to turn it into a soup!

Tried adding pinto beans? I try to use 1 can kidney, 1 can pinto if I'm cooking a big vat of regular chilli - they add a great extra flavour.

I tried your soup with parboiled (5mins) boiled potato chunks cooked into it and they worked a treat!
