I'm a muppet and need parsnip recipes please!

hi all,

I accidentially ordered 4 bags of parsnips rather than 1 from online delivery. DH thought this was the funniest thing ever

I'm currently using up one bag making soup, should be able to use up most of a bag tomorrow with lunch, any ideas what to do with the other 1kg of parsnips????

I have a recipe where you fry parsnips and streaky bacon with rosemary and olive oil and stir through pasta - it is delicious!

For the rest I would cook it and mash it and then freeze it to serve with some pork chops and savoy cabbage another day.

par boil and then freeze. You can keep them for roasting (you can roast from frozen). Or you can use them for making soups but I would prob defrost first.

I'm going to be selfish and have a go a the other ideas, really like the sound of the pasta idea, never thought to have parsnips with pasta...

I'd make a monstrous batch of cheesy parsnip mash and freeze it, then use it to top sheperd's pies etc, or thin it out into soup
