please share with me your favourite lasagna recipes

i want to make a lasagna tomorrow and previous ones i've made have been too sloppy.i don't like them with too much sauce in iykwim.just wondered what recipe you use thanks x

my mum has got an original italian one will try and dig out if any help.

I have a really great, non-sloppy recipe but it requires a lot of cooking time (2-3 hours simmering) for the bolognese sauce. This is the secret to the non-sloppiness IMO. The other unusual thing about is it that you add milk to the sauce as well as red wine. Apparently this tenderises the mince- it also makes the sauce lovely and thick and creamy.

I have treid in vain to pass this recipe on but the long cooking and milk things seem to put people off! Would you like it mrstimlovejoy? (go on you know you want to....)

might be to late now...I do a sort of Slimming world version Lasagna which is gorgeous
Basically I make my own Tomatoe sauce, wiht tinned tomatoes, any veggies you might want to put in (I usually use Peppers/Mushrooms/Spinach,Aubergines/Courgettes etc...) blend it, than fry the mince meat with onion and garlic and add enough tomoato sauce to make the sauce nicely thick!
Than I mix Quark/greek yoghurt with eggs (about 5 eggs) and some cheese and seasoning.
and than it all gets layered, i.e. bit bolognese, than the pasta sheets, than the white sauce, than bolognese, etc....and than add more cheese on top....

it is really nice, and even my Kids like it

Lasagna recipe I have used that costs about a million dollars to make and puts about as many pounds on but it is not sloppy! Actually, I make this meat sauce for pasta or a little lighter version with fresh tomatoes because my kids love it so.

I don't bother with a cheese sauce inbetween layers. I copy Jamie and blob creme fraiche and grated cheese instead. It's not so sloppy.

mrsm...a bit than like the quark/egg/cheese combo in the SW recipe....the egg binds it really well together!

i like a blob of good quality pate in the
bol. sauce (makes it rich) and bechemel sauce with parmesan on top bit time comsuming tho
jamie olivers creme fraiche and cheese and cheese sounds like a good time saver tho

yep i add milk and red wine to sauce too and sometimes a few peppercorns ..just make all sauces thick to start with .. stand a spoon up in them !

easy peasy lasagne. I do make it in the afternoon and leave it to simmer for a couple of hours. I also layer it with numerous veg - mashed butternut and sweet potato, spinach, corgette. Anything goes.

I also tend to use double the amount of cottage cheese . I buy the biggest pottle there is.
