quick wanted jacket potatoes to go with quiche but potatoes too small what else can i do

Chop them and boil, serve as if they were new pots with a knob of butter.

do mini baked spuds.. pop them on a tray brush them with some olive oil and either rub with garlic and sprinkle a little salt on.. or sprinkle some garlic salt on.. and bake yummmy

soem are the size of new potatoes do think i could still do jackets but just a few. I thought i had some big ones left went to the shop earlier and all!

roast potato salad. mix with a bit of olive oil and salt and pepper, then roast. Remove from oven, and dress with a honey mustard vinagrette while still hot, and chuck in some spring onions, or finely sliced onion.

Vinagrette

two teaspoons dijon mustard, two (or to taste) tsp of honey, mix in a bowl then whisk in olive oil, like making a mayonnaise til thick. Thin down slightly with lemon juice.
