QUICK! Before I ruin Suzy Wong's brownies....HELP!

They aren't pale and cracked but are firmer round the edge and wibbly in the middle, they've been in for 25 mins... shall I get them out?

I've never had success with these.

Which isn't to say they aren't fab when you eat the cock ups with a spoon, straight from the tin.

I will harass other posters my last attempt at brownies was rock hard

Excuses, excuses...

I think the recipe is this:

Chocolate Brownies
7 or 8 inch square (or equivalent) tin lined with greaseproof paper/baking parchment

150g butter
150g chocolate, at least half of it should be plain
2 eggs
1 tsp vanilla extract
175g caster sugar
100g plain flour
1 big tablespoon of drinking chocolate (or cocoa for really rich brownies)
quarter of a teaspoon of salt
100g walnuts (optional. Choc chips work well too!)

Preheat oven to 180c/GM4 moderate oven.
melt together butter and chocolate in a saucepan over a low heat. Leave it to cool.
In a bowl, beat together the eggs, vanilla and sugar until creamy.
Sift in the flour, drinking chocolate/cocoa and salt.
Add the walnuts if using.
And the chocolate and butter and mix well with a spatula, but don't beat, until smooth and glossy.
Scrape the batter into the lined tin and bake for 18 minutes.
The top should be pale and opaque with a couple of cracks starting to emerge like a dried up muddy puddle. The body of the mix will still be slightly wobbly with the edges looking like ordinary cake. If it isn?t like this then leave it in for another 3 minutes or until the first cracks in the puddle surface appear.
Leave it in the tin to cool for 20 minutes and cut into squares.

Even if you stuff up the cooking time, they still taste divine

we have made them, had them with plain (homemade) yog and a handfull of strawbs and they were yummy

I can't believe they actually worked
