Is there a crunchy cheesy veggie bake recipe lurking anywhere? Behind the sofa perhaps?

We've decided to do our bit and 'go green' one day a week. Today is that day, since I forgot to get any meat out of the freezer.

Sooo, I do recall a recipe somewhere that sounded nice, it was a cheesy veggie bake with some sort of crumble on the top, does anyone know it?

Trouble is, my vegetables are very lame. I've got some frozen spinach, carrots, cauliflower, broccolli, baked beans, courgette and string beans. So don't ask me to do anything with lentils or cous cous because I don't stock those funny things!

Yeah I know! ds just poked it, said he doesn't like breadcrumbs, or cheese sauce, or cauliflower and dh grumbled at it lacking in any flavour and needing a bacon sarnie afterwards!
