Tasty but Easy salad ideas to accompany a BBQ this weekend please

Get a bag of dark leaves - one of those rocket/watercress/spinach ones is good - and add to it halved baby plum or santini-type tomatoes, cucumber chunks, spring onion or red onion finely sliced, yellow pepper strips and just before you serve it, some chopped avocado.

Looks fab, colourful and healthy! I usually dress it with a drizzle of avocado oil or a combo of extra-virgin olive oil and balsamic vinegar - just a tiny wee bit is all that's needed to coat the leaves, then add all the other bits n' bobs.

Whole or halved boiled eggs go nicely in this too if you want to make it more of a 'meal' salad.

new potato salad- no peeling required!
bag of new potatoes/salad potatoes, skins left one but cut into small pieces. boiled until cooked but stll firm. mix with mayo and teasoon mustard. top with snipped chives.

ohh have another potato salad thing for you.

1/2 and 1/2 sour cream to mayo
teaspoon of whole grain mustard
finely chopped spring oinions and pickeled gerkins.. as many as you think.
and new potatoes.

topped with chives .. tis very very yummy.

pasta salad- pasta cooked with pesto or other sauce stirred through- not much just enought to coat the pasta. recommend red pesto rather than green but thats personal preference.

a cucumber and mint type salad would be nice if you are doing lamb?

Could do a couscous salad type thing.

Either mix some cooked couscous with chopped up cucumber, tomatoes, spring onions and mint OR roast a pile of chopped up veg, like peppers, red onions, corgettes, aubergine etc and then mix them into the couscous - and a squeeze of lemon/lime.

My favourite BBQ salad is roasted veg - dead easy and compliments the meat nicely.

Just chop up red onion, three peppers (red, green, yellow - or combination), 2 or 3 courgettes and peel 2 garlic gloves (but leave whole).

Put the veg in a roasting tin and drizzle with your preferred oil, add, salt and pepper and some of your favourite dried herbs. Rub them together with your hands to ensure they get a good coating of oil and seasoning.

Cook in oven on a medium heat - equivalent of GM5.

Give them a stir half way through.

Once they are cooked - fish around for the cloves of garlic and discard.

Enjoy - yummy hot or cold.

Also taste great mixed up with cous cous to make a roasted veg cous cous salad - just put a couple of sprigs of corriander on top if you like it

Dice up some chicory, celery and apples, mix with some mayo. Lovely fresh salad - perfect with a BBQ.

For a green salad, finely chop a dark green lettuce, such as Cos, finely slice some big spring onions, finely slice cucumber (good to squeeze out the excess water). Toss those with a dressing of olive oil, whole grain mustard, balsamic & some salt & pepper.

Carrot and kidney bean salad,sounds weird but is yum.Grate carrot,add kidney beans,add a sprinkle of sea salt ad black pepprer, a little finely diced red onion and some vinagrette dressing,and bobs yer uncle.
