what can I do with a butternut squash other than risotto?

that my 17 month old will eat? hvae 2 languishing in the fridge and we had risotto the other night! any ideas welcome...

I cut mine into wedges, add a little olive oil and roast it. Or bake it in skin, scoop out inside and mix with peas and butter, as a mashy type thing.

make into soup, with pint and half of stock, chopped onion and chop bns, simmer and then puree

or bns wedges

Cut into chunks and roast in olive oil with garlic. Don't need to peel them.

Butternut squash in red thai lamb curry is fabulous, just cut into chunks and add during last 40-45 mins of cooking.

17-month-olds can eat curries (red thai is not at all hot), DS did, so it's an option.

My 21 mo DS loves bns "chips" - cut into thin wedges, roasted with a bit of olive oil and a sprinkling of paprika!

I use it a lot in veggie curry.

There's also a great salad with butter nut squash roasted in the oven with olive oil and chilli flakes, then served with rocket, parma ham, parmesan shavings and balsamic. Yummy.

I like jamie Oliver's recipe for bns stuffed with rice and roasted. You can alter the stuffing ingredients depending on what you have/like.

It's lovely in soup with a few curry spices and some coconut milk and lemon juice.

We roast it and mash it, then stir into pasta with ricotta, tahini (sesame paste) and chopped tomatoes - it's delicious!

I think the in vogue thing is butternut squash pizza, it seems to feature in every food mag atm, sort of like this
