Help, have halloumi stockpile...

Any suggestions? I seem to have accidentally bought several halloumis as storecupboard staple but don't really know what to do with them. I only know an ancient Delia Smith recipe with coriander and garlic which is nice but not that nice.

We used to have big jars of homemade halloumi sent over from Cyprus when I was little. We always ate it grilled or plain with a simple salad and bread. It doesn't really need dressing up.

It's nice just plain with melon on a hot day.

It usually has a long shelf life, the packets I have in the fridge are use by may 2010 so you don't have to rush to use it up.

Add it to a massive oven tray of Mediterranean Roast Veg towards the end of the baking time and serve with ciabatta.

Oh I adore halloumi!

Haven't had any for months though it seems very expensive these days and I tend to scoff a pack for one meal...

I cut into bits which I grill and toss in with cherry tomato and lettuce salad and my home made salad dressing: wholegrain mustard, olive oil, and cider vinegar.

No chance of you posting any then.... [hopeful emoticon]

This has just reminded me of another halloumi recipe I do (can you tell I LOVE halloumi!)

Grilled halloumi (with jerk seasoning) and homemade coleslaw (with chopped chilli and peanuts in) served in pitta breads - it is delicious.

Quite happy to post the recipe if anyone wants it

Update: we had the halloumi chilli and orange salad which Guadalupe suggested and it was fab. I can see the halloumi way forward now guys! Thank you
