Can anyone tell me how to make a delicious gooseberry pie or crumble?

On a whim I have just bought a punnet of gooseberries. On getting home I remembered that everything I have ever made with gooseberries before has been repulsive not been a success. That is probably because I have just winged it rather than using a recipe or actually knowing how to cook gooseberries

So I would be grateful for directions or a link to a good recipe, thanks.

Easy - top and tail the gooseberries and rinse. Place in your crumble dish with some sugar (probably 2oz/50g) and add crumble topping. 200C for 30-45 mins. Made one last night!

Nigella's gooseberry crumble is delish

Crumble

175g unsalted butter
200g self raising flour
6tbsp light muscovado sugar
5tbpsn vanilla sugar (I just use ordinary and add a dash of essence)

Filling

750g gooseberries
125g caster sugar
1 tbsp+1tspn elderflower cordial
1 lg egg
5 tbsp double cream

Rub butter into flour, fork in sugars

Goosberries, sugar and 1tbsp elderflower in pan and simmer one minute or so.

Beat egg, 1tspn elderflower and cream together and stir into gooseberries.

Pop crumble mix on top and cook for 30-40 mins at gas mark 5

It's yummy!

Thanks very much both - I think I will do a composite mixture of both your suggestions, because I don't have many of the ingredients for the Nigella one and we are in the middle of a thunderstorm so I'm not going to the shops again! I like the idea of using vanilla in the topping and BC I am glad you told me about topping and tailing...I wasn't sure.
