..for his pirate project that don't involve fruit (he doesn't eat fruit and can detect it at a million paces) or too much spicyness.

Fried dumpling (also known as Johnny Cakes).

Mix 2 cups of SR flour and 1 cup of milk and knead to make dough. Make small balls out of the dough and flatten slightly. Heat the cooking oil in frying pan, and fry dough pieces on each side until cooked. Make sure that you keep the heat on low for these dumplings or they will be hard on the sides and soft around the edges.

You can serve these with fricasee fish, fried fish, ackee and saltfish (Jamaican national dish) or how about jerk chicken or pork?

Ackee and saltfish.

Soak saltfish in water for 24 hours (change water at least once) to remove most of the salt. Decant water and boil fish for about 15 minutes. Cool and remove bones as well as break up fish into small pieces. Heat oil in a frying pan. Add chopped onions, thyme and scotch bonnet pepper, a freshly chopped tomato and green peppers. Stir for a few minutes. Add the fish. Stir. Simmer for 5 minutes, then add a can of drained ackee. Do not stir because this will cause the ackees to break up. Cook for a few more minutes then sprinkle with black pepper.

If you want, can also serve with plantain (looks like bananas). Just peel, slice and fry for a few minutes on each side.

Thank you so much! Sadly we only had today and the local co-op didn't have salt fish, so we made the dumplings and had them with chicken grilled with lime juice, and rice and peas. Very yum. And I'm going to make the fish cakes at the weekend with the rice and peas again - it was very successful!
