Nice salad ideas for my mate who has a stomach band... eek...

My friend is coming over for dinner tomorrow eve and need ideas for something nice to eat.

She had a tummy band put on in January, so can't eat the usuals, but we've narrowed it down to salad!

Need ideas as I don't really want to do Ceasar, which is all I can think of!

She can't eat bread, scrub (eh?), rice, chips or pastry.

Help me, foodies!

I thought that lettuce and salady things were a no-no for lap-bands? My friend who had one last year always had to think: protein first, then vitamins and minerals then carbs. With that in mind, maybe some grilled meat/fish and veggies (cooked) either cold or in a stir fry?

I've ran the salad idea past her and she has said it's fine.

But I don't know what sort!

If it is to be salad, pending confirmation on the protein-first issue, how about a version of a Cobb salad I once had - baby spinach, crumbled Roquefort, black grapes, crispy bacon shreds, pine nuts, with a warm dressing of cider vinegar and olive oil with a few drops of sesame oil.

A lot of strong flavours, so a little goes a long way.
