You can do similar with parma ham and mozzarella on slices of french loaf - slice of ham, bit of (quality) mozzarella and a tomatoe. Drizzle with olive oil/pesto and you're done.

Does it have to be things you premake and assemble? I always whip up mackerel pate which goes down a treat but normally don't bother actually loading up bread/crackers for it but just shove it out on a table with lots of french bread?

As it's spring, another nice one is thin slices of asparagus with a piece of parma ham wrapped around ( I find I can take a normal piece of parma ham and tear it into three long strips with one strip per asparagus spear). Lay on a baking sheet and drizzle with some olive oil, sprinkle some salt and scatter a couple of garlic cloves (skin on) around then bake for about 15 minutes. Provide cream cheese/borsin for dipping.

figs wrapped in parma ham

oat cakes (you can even buy mini ones which I use for this) covered in lovely simple toppings (usually cream cheese as a base that another topping sticks to) like half a cherry tomato, an olive, smokes salmon, cucumber.

I know lots of people poo poo them, but I'm rather fond of nice cucumber sandwiches, cut into little triangles with the crusts removed.

Mini pitta breads cut in half and filled with humous and salad

mini falafels

mini foccaccia breads or pizza type things

feta cheese and cherry tomato and olive tarts. As the fillings don't need cooking you can just buy mini pastry cases and easily fill them.

I like mini things!

Buy a big jar of pitted black olives, then marinate them in loads of chopped coriander, garlic and lemon juice and serve in bowls with the marinade on, with tooth picks for people to eat them without getting fingers dirty if they are fussy.

Bruschetta - toast french bread and then top with black olives, tomatoes and basil bashed about with a pestle and mortar. Drizzle with extra virgin olive oil. You can drag a garlic clove over the top of the bread before you add the topping but it depends if your guests will mind garlicky breath or not!

Mackerel pate - smoked mackerel fillets, cottage cheese, whizz in blender with lemon juice and black pepper to taste. Can also add in some melted butter for extra yum

Rosemary and olive drop scones with goats cheese and cherry tomatoes.

sliced cucumber topped with shop-bought tara, dressed with sprinkles of paprika and/or mini dill sprigs

mini popadums with sour cream topped with prawns (but must serve immediately)

cubes of melon wrapped in parma ham
or bread sticks with parma ham wrapped around the top

cherry tomatoes, halved and deseeded, a little pesto in each half, cube of feta inbetween and stuck back together with a cocktail stick
OR
rounds of puff pastry, spread with pesto, topped with slice of tomato and mozzarella and baked.

One of my suscesses was mini caesar salads. I lightly rolled out some brown bread and cut it into rounds, using a pastry cutter. Popped them in a fairy cake tin and in the oven for 5 or 6 mins to crisp up. Chopped up lots of baby gem lettuce and mixed with dressing. Topped on the bread, they were lovely!
