Honey - anyone know a good recipe for cakes made with honey?

Providing cakes for a 'save the honey bees' event and recipes are all supposed to be honey-based, or feature fruits that rely on the honey bee to be propogated.

Any suggestions??

A friend made this one once Devonshire Honey Cake
It was very nice but if I would make it myself I would sprinkle some pecans or almond slivers on top to give it some crunch.

There's a lovely Nigella chocolate and honey cake in How To Eat. Or possibly Feast.

It's delicious, and would be a change from more obvious honey-tasting cakes.

melamakarona - greek cookies - are all about the honey. Nigella has a recipe here

DH (who is greek) loves them and so does my father (who's not greek). Personally, I'm not a fan but who am I to argue with what other people like.
