fritatta - shallow fry with onions, peppers and paprika - add frozen peas and lots of beaten egg then stick in oven - 4 minutes before ready add some blanched asparagus.

Is very yummy.

I just chop up potatoes and fry with some onion add some tinned toms and a few tablespoons of pataks curry paste and bobs ya uncle!!!

Or slice them up - and layer them into an over proof with some fried onions. Pour over garlic sauce (thickened milk with LOADS of garlic). Throw on some grated cheese on top and pop in the oven.

Or cut into cubes & bung in a veggie curry - last thing in so they don't disintegrate totally.
