Loads of green peppers to use up, can you help mw with some recipes

Got them cheap and needed a few for pizza and salad but have loads left and I am stuch what to do with them as they are not as nice roasted (or are they) as red or yellow ones unless I am doing something wrong I find them bitter. Hate waste and had thought of chutney or along those lines....but no clue really so please help. Much appreciated

yeah green ones are fugly roasted

maybe stuffing them would be nice?

or shove a chopped up one in everything!

i once had scrambled egg with cheese and green peppers through it and it was nice, but I do have strange taste.

Cut them into quarters.

Chop some bacon into dice and fry till crisp. Mix with cream cheese and season with black pepper.

Stuff/spread cheese/bacon mixture into each quarter and bake in the oven for 10 minutes or so in a hot oven.

Sliced with other veg and dip.
Stromboli.
I put them in omelettes all the time and I like them stuffed.
Can be sliced and frozen for later use too.

Thankyou everyone....good ideas there. will try all of them this week..think peppers keep a wee while so hopefully I wont get sick off them. FIrst job this morning is to get some in the freezer..how could I off all people the freezer queen forget about freezing them... duh!!!

whizz them up in a food processor and add to anything bolognesey.

or to a tomatoey pasta sauce

green peppers are excellent in a stir fry.

1.cut some onions and fry them in wok or fryingpan, with a sprinkle of suger, for 2-3 mins.

  1. cut peppers. toss in pan and fry for 2-3 mins.
  2. in a mixing bowl add soy sauce, runny honey, cooking oil, and seaseme oil.
4.cut up chicken or turkey into bite size pieces, dip in mixture, then add to pan. fry till cooked through. 5.spoon onto plate. drizzle over more seaseme oil, and what is left of mixture.
  1. serve with chips, salad, or roast veg.

this is good because you can add more veg to the stirfry. also you can ajust the mixture of soysauce, honey, and oils to your taste.

I really don't like green peppers and find the flavour too overpowering... but the other suggestions here are good, or if you like them raw just munch on them instead of an apple or whatever.
