Making sorbet - do you have to boil the sugar & water?

I have a recipe for Prosecco sorbet that I'm makign tonight but it only says to combine all the ingredients and stir until the sugar is dissolved - you don't have to boil it. I've never heard of a recipe for sorbet that doesn't need boiling... do you think the recipe is wrong or can you make a syrup without boiling the sugar & water? Ta in advance!

I make sorbets without boiling. The boiled syrup gives a tacky cohesive texture to ice-creams and sorbets, no boiling can give more of a granita texture, so it depends what you're looking for.
