Spicy cauliflower soup - anyone got a recipe?

Given that cauliflower is great in a curry, does anyone else think it would be good in a soup - maybe with coconut milk and/or lentils for nice texture? Does a recipe exist out there before I try to wing it myself and make something vile?

Here you go It's a bit 'try it and see' with ingredients, but that's how curried things are meant to are meant to be. Just add more according to taste

Ingredients (assuming 2-3 people)
1 medium cauliflower
1 onion
4-6 tomatoes
1 tsp Curry paste (balti is good)
can coconut milk (organic tastes best)
potatoes (normail boiling spuds are fine, enough for each person, just use your judgement)
finger of Ginger
squeeze of a lemonLemon
Spinach (about 1/2 bag of Sainsbo's is about right)

Method:

Fry diced onion until soft. Add curry paste and finely diced ginger. Fry until fragrant. Add coconut milk and diced tomatoes, chopped cauliflower and chopped potatoes.
Put the lid on and cook until the spuds are soft.

Turn the heat off, season with salt, pepper and 1/2 squeezed lemon. Add the spinach and stir in, put the lid back on and leave for 2-3 mins.

You can alter the quantities (less coconut milk) for a really good curry, or add more tomatoes and dice everything small for a gorgeous soup.

I wasn't sure about this when I tried it (thought Thai style cauliflower would be weird) but it's absolutely gorgeous!

Not frozen it, no. Have a feeling the coconut milk would separate but not sure.
