Chicken casserole - anyone got a tasty recipe?

Have you tried Jamie Oliver's white wine casserole from his ministry of food book? It's delicious, I'll post it if you want?

oops, sorry- I went off to do my tesco online shop! Here it is:

Chicken & white wine stew 1.5 hrs

2 sticks celery
2 medium onions
2 carrots
olive oil
1 heaped tbsp plain flour
1 x 400g tin chopped tomatoes
sea salt & freshly ground pepper
3 sprigs fresh thyme
500g diced, boneless, skinless chicken thighs
500ml white wine

Preheat oven 200C/Gas 6.
Roughly chop veg
Put casserole pan on med heat
All veg & herb into pan with 2 lugs olive oil, fry for 10 mins
Add meat & flour
Pour in wine & tinned toms
Give good stir & season
Bring to boil, put lid on & cook in oven
Remove lid for final half hour of cooking

It is really tasty, I serve it with small roasties and a puff pastry- lovely combo.

You can use chicken breasts instead if you prefer- I usually do for speed as they're easier to work with but the thighs go really tender and are gorgeous.

I was looking through my recipes for baby food for another thread and now I'm seriously considering making a chicken-peach casserole for my family for lunch today-with a little rice and some green beans I think.

Weepootle thanks for posting the recipe but you have missed out how long to cook it in the oven for IT does sound delicious but am guessing not really suitable for DS1 and DS2 due to the amount of alcohol in it???

Not sure about the chicken and peach - would be interested to see how that tastes.

Ceebee, 1.5 hrs. I give it to dd1 (4), she loves it- I didn't think twice about the amount of wine in... is it a no no?

I have made the JO Ministry of Food casserole quite a few times and it is delicious.
I have made it with chicken or veg stock instead of wine and it still tastes lovely and is then more suitable for kids.
I topped it with a shortcrust pastry top and popped it in the oven and my kids (age 7 and 4) said it was the best thing they had ever tasted (they are pretty easily pleased though - lol)

I am not sure about the alcohol tbh - my eldest is only 2.10, so a bit younger than your DD, and I am always wary about cooking with alcohol but not sure if the cooking gets rid of all the alcohol iyswim.
