The recipe says it should be toasted pine nuts but i haven't got any. Which would be the better substitute?

Not sure either would be an exact substitute, but cashew nuts would work ok. Have had them in rice salad before.

I often use sunflower seeds which I dry fry with a little Tamari or Soy sauce.

Either would be fabulous.

I'd add soy sauce just after toasting if I was using sunflower seeds, or just toast the cashew nuts.

oops tamari is soy sauce isn't it?

I use both kinds of seends in salads with rice/pasta/quinoa/couscous, just toast lightly and add a bit of extra virgin olive oil to the salad
