Well and other stuff, obviously. I've just made tzatsiki and it's left me with three and a half lemons and a huge bunch of mint left over

How about lemonade with lots of, um, mint?

I think you steep or boil lemons, add half a ton of sugar, and that's about it. I'm sure Nigella will have a recipe somewhere

Have you also got (or could easily get) couscous/quinoa/some other similar grain thing, olive oil, salt, pepper, tomatoes, cucumber, salad onions & parsley?

It's a sort of middle eastern type salad thing---but maybe not so good if you don't like those little grains....

Ok, here ya go:

Ingredients:
1 19 oz can small white beans, rinsed & drained
1 med cucumber, diced
4 salad onions, thinly sliced
1/4 cup chopped flat leaf parsley
2 tablespoons fresh lemon juice
4 tsp extra virgin olive oil
1 tsp chopped mint
1 garlic clove, crushed
1/2 tsp salt

Mix all together, refrigerate covered until chilled, at least one hour.

stop it all of you with the alcohol - I am pregnant! Don't mind a glass of wine now and again but a jug of pimms or enough gin and tonic to use up 3 lemons is probably not on
Would you believe the can of cannelini beans that has been cluttering up the back of the cupboard for years has mysteriously disappeared? Never mind I will buy some from the local shop tomorrow and we'll have it tomorrow night. I'm really looking forward to it - think my mum used to make something similar. Also only requires me to purchase one tin of beans (unless I could wash a tin of baked beans? )

Lemon and mint sorbet?

2 cups water
1 1/2 cups sugar
1/2 cup of fresh lemon juice
150 mls cream
2 tbsp finely chopped fresh mint leaves
zest of 1 lemon

Combine sugar and water in a saucepan and stir over a gentle heat untill all of the sugar has dissolved.

Bring to the boil and simmer uncovered without stirring for 5 mins and then remove from heat and cool. You can do this quickly by placing the saucepan in a sink of cold water.

Stir in lemon juice and cream and pour into a shallow container and freeze untill firm. You could also use lime juice.

Remove mix from container and blend untill smooth. Add the chopped mint and lemon zest, return to container and freeze again untill firm.

Serve garnished with fresh mint.

not exactly main ingredients, but essential, i have an ancient much loved nigel slater recipe where you flash fry chicken thighs with chilli, raisins, pine nuts, lemon juice and mint, makes a delish gooey sauce and you stuff it in pitta bread. nom. (btw for future ref, realised you picked something less exciting already posted )

as well as my disappearing tin of beans, I left one carrier bag in my boot last night from shopping - it was of course the one with the raw and cooked meat in it

I have a lovely recipe for a coconut and lemon cake, with a mint and lemon syrup drizzled over the top.
