If you had 2 chicken thighs to cooks for dinner tonight what would you do with them?

Im having a risotto with griddled asparagus i have 2 chicken thighs and i need insperation, i idealy would like to bake them or grill them with some delicious flavours. Talk Chicken to me people.

We are having chicken thighs tonight in a beany stew with carrots/onions. Was in this month's Sainsbury's magazine but if you look at the Good Food site then type in chicken thighs you will get zillions of recipes. Well 62 at least! Love chicken thighs but hate the de-boning and skinning bit.

Grill them. Make up a marinade (don't worry if you're not marinading for hours - five seconds will do ) with:

Tomatoe sauce
Mixed herbs - basil/oregano/thyme etc are nice
bit of chilli
salt
Pepper
dash of vinegar and/or lemon and/or wine

Grill under hot grill. Turn relatively frequently - the skin will still burn slightly, but in a delicious smokey way.

It's very summery done this way.

marinate w lemon and garlic (and a bit of paprika or chilli?). grill. delicious w your risotto....

i did some chicken thighs marinated in

olive oil, garlic, honey, tomato ketchup, dark soy sauce and a bit of sugar. did them on the griddle. .v v v nice

If you can, take out the bones, put chicken in two freezer bags and flatten with a rolling pin.
Heat some oil in a non-stick frying pan and cook the chicken for 2 mins on each side until golden.
While the chicken cooks, mix together 2oz of cheddar cheese and 4 cherry tomatoes.
Take the chicken out of the pan, wipe out the oil with kitchen paper.
Return the chicken to the pan, spread each piece of chicken with a teaspoon of pesto sauce then pile on the cheese and tomatoes.
Pop the whole pan under the grill for a couple of minutes to melt the cheese, serve with green salad.
All of this should only take 15 mins at most

2 pieces of chicken (no bones)
1 tbsp of Olive oil
2oz of cheddar cheese (gratted)
2 tsp Pesto sauce
Green salad to serve.
Nice and easy and tasty!

Oh - sorry, forgot. Oil in the marinade. Otherwise you land up with too much thickness and way too much tomatoe. I'd go with about 2/3 tomotoe 1/3 oil - but give or take depending on how you feel.
