Give me ALL your jacket potato fillings!!

I love jacket pots but need some inspiration about what to fill them with other than the following:

tuna & sweetcorn mayonnaise (fave)
sour cream & chives
cheese & beans
butter & bacon bits

Anything else?

Did this the other night - baked the pots, cooked leeks in butter, then scooped out the potato from the skins and mixed in the leeks along with some mustard, cheddar and cream, put it all back in the skins, bit of parmesan on top and popped it in the oven for 10 mins. Lovely.

Prawns with a cocktail-type sauce
Smoked mackerel, cottage cheese and greek yoghurt whizzed up in the blender
Chopped tomato, avocado and mozzarella
Ratatouille with melted cheese
Chili con carne
Ragu sauce

Hummus is good.
Can second scooping out the middle and adding cheese and veggies then putting back into the oven too.

Cottage cheese and black pepper

Bolognaise

Chilli con carne (prefer to do Jacket Wedges and dollop the Chilli, sour cream and Guacamole over them melt some cheese over the top)

Hummous with roast veg

Coronation chicken

Left over curry

Left over stew

Nigellas creamed chicken

Am hungry now

ham and cheese
bacon and cheese
cheese and coleslaw [my weird taste] lol
cream cheese and spring onion
prawn and pepper
smoked ham and pineapple
hot dog and sweetcorn
chicken and avocado

Forgot about cheese and coleslaw bubblagirl
though I prefer that in a toastie.

left over roast chicken and mayo is probably my fave.

Tuna, cream cheese and copious amounts of black pepper. Mix with the scooped out inside of the jacket potatoe and then put back with a bit of cheddar/parmesan on top and back in the oven for 5 minutes.

lentils and mushrooms topped with creme fraiche and cheddar cheese. yum!
