I have left over rice, boiled potatoes and a some broccoli - please inspire me for the kids tea!!

Rice was cooked yesterday.
Potatoes and broccoli the day before.

Is there anything magnificent that I can do with them?

Egg fried rice with the rice and broccoli? With soy sauce - yum. I'd save the boiled pots tomorrow to fry up for tea? They could become hash (with corned beef, or chorizo) or saute potatoes or, if they don't mind eggs again, spanish omelette.

Agree re : bin the rice.

Have you got any eggs? You could make a kind of fritatta with the potatoes and broccoli. Add any other veg you've got around, plus some cheese or ham if you like.

dunno. There's a rice and potato dish you can do if you are cooking that day, but don't know how well it would work with leftovers.

I'd be tempted to cube the potatoes and stick them in the oven with some oil. finely chop the broccoli and add something to it - something protein, cos you've got a starch heavy meal, add in the cubed potatoes, bung in some sort of sauce and serve the concoction in the middle of a sort of ring of rice.

Mealtimes at my house are interesting.

Is left-over rice really dodgy? I've been feeding it to DD (18months) for a while now Thought it was only rice that had been par-boiled for ages (eg in a restaurant) that was the problem?

Chicken, potato and broccoli bake in a cream/cheese sauce - yummy.

Never once had food poisoning from having left over rice I always fry up left over rice with chicken, onion, peppers, mixed veg (use your broccoli) to do a stir fry. Add some chilli and soya sauce. Slice and fry the potatoes as a side dish, or coat in oil and oven bake to have roast potatoes as another side dish?

Would freezing the rice solve the problem? Then you could have egg-fried rice in a day or two.

Leftover rice is fine as long as stored correctly and that you heat it to piping hot.

I'd go with a kind of croquette/fritter type thing too.

Spanish Omlette? Fry the potatoes, throw in the brocolli and pour over some beated eggs. Cook gently until set. You could put some grated cheese on tom and shove it under the grill until the cheese bubbles if you wanted.

rice will be fine, how old are DC how about a very very mild curry style dish maybe add a few more veg or chix

If I were you I'd cool the rice by placing in cold water or leave under running tap to ensure you put the rice in the fridge as quick as possible.

I knew you would sort me out! I did get the now cold rice in to the fridge within about 45 mins of cooking so i think it will be fine today.

The kids are 2 and 9 months old - is there anything 'patty' like that I could make with the rice that would minimise the mess ??
